CNN nominated Ukrainian borscht for 20 of the most delicious soups in the world. Being included on the list of Ukraine’s intangible heritage, it has a centuries-old history, a special cultural significance for Ukraine, and more than 70 recipes that differ from family to family and also regionally.

The key ingredients of this hearty and rich Ukrainian soup are meat, beetroot and a variety of vegetables from beans to cabbage, although there are also meat-free options. So how do you know it is borscht and not just any soup? The borscht formula is in the balance of the sour and sweet taste, and every Ukrainian family has its own secret on how to achieve that harmony!

Apart from traditional ingredients like beetroot, carrot, tomato, cabbage, pork, or beef, or both… it has lots of yummy recipes that may seem unusual to you. Ready to discover some new combinations? In various parts of Ukraine, local foodies could also add: dried fruits, quass (rye beer), apple, berries, fish (crucian, loach, herring), nettle, pear, cherry juice, pickled cucumbers, milk. Whatever you add to the classic recipe, you can still call it borscht — so diverse it is!
